Clubes de Ciencia is a successful student-run, non-profit group in Mexico that collaborates with US universities to host workshops in 9 different cities/universities across Mexico in July-August. They are supported by several organizations in the US, including U of Chicago, Harvard, Royal Society of Chemistry, etc (c.f. annual report). The idea is that a graduate student / postdoc from the US pairs with one from Mexico to develop and run a single week-long workshop for high school and undergraduate students. They are open to having two US-based instructors per workshop as well.

You can directly apply on the website. If you are instead interested in participating via STEM Pals, a UW-based outreach organization, please email stementorship@uw.edu at your earliest convenience. An advantage of going this route is the ability to work with others to develop/reuse lessons.
